TUNNEL OVEN
The advantages in using a tunnel oven are mainly ergonomic:
a) with a simple movement you place the product to bake directly on the wire-mesh with no need to open and close doors and to use paddles or other devices to put the products into the oven;
b) you can use the wire-mesh as a belt conveyor to transfer the products directly to the working station;
c) when using there is no need to follow the baking process, since the baking time and temperature have been previously set (this solution enables to optimise the production cycle: in a standard pizza production process you have one person rolling out and topping the product, a second one putting the product into the oven and following the baking process and a third who packs or distributes the product). You therefore need only two people to operate a tunnel oven with great economical advantages.
